Lillooet, British Columbia, CanadaThe latest blend is 83% Dry Creek estate and 17% from Riverbend Vineyard in the Similkameen Valley. Three-quarters of the mix is fermented in stainless steel. The remainder is fermented in French oak barrels. The wine was stirred twice a month to help the texture post ferment. The style is lean and bright with ample citrus and a fresh tight profile. Best to serve this with creamy or buttery dishes to ease the acidity.
