Caymus Special Selection Cabernet Sauvignon 1990
Napa Valley, California, United States1st vintage was 1975. Similar in style to the 1985 but has more tannin. Highest ever level of acidity. Half the wine is pressed off after fermentation to extract only the softest tannins. Bottled January 1994. 100 per cent cabernet, 34 months in wood one and two year old wood. Late in the process Wagner racks most but not all of the wine into new wood for a little seasoning before the final blend, again done differently by waiting until the end.
