The destemmed fruit is partially native fermented over four weeks before ageing eight months in older French barrels and puncheons, meant to expand and grow the wine without any oak influence. The style is fleshy with a distinct, barnyard, earthy undercurrent that equalizes the black cherry and absorbs some of the spice and acidity. The destemmed fruit was partially native fermented over four weeks before eight months in older French barrels and puncheons. Smoked stone, fleshy black cherry, blackcurrant is heavily scented with nutmeg and cloves on a plumped palate, with tart, blackcurrant acidity sharpening. The finish lingers with cinnamon warmth.
