Corbières, Languedoc, Sud de France, FranceThe carignan grapes are handpicked at perfect maturity and placed whole into vats with destemmed crushed grenache. The skin contact totals 10-15 days before it all spends 18 months ageing in French oak barrels. The colour is purple-black with an aromatic mix of garrigue, warm earth, black plums, and blackcurrants. Similar notes coat the palate, showing full ripeness, rich, dense black fruits, and equally dense, glossy tannins. A rack of lamb comes to mind here, along with grilled root vegetables, Mediterranean charcuteries, and local cheeses. This wine began in the 20th century on the mythical territory of Fontfroide.
