Oliver, Okanagan Valley, British Columbia, CanadaOkanagan (Oliver) and Similkameen (Keremeos) fruit come together in a 61/39 mix of sauvignon and sémillon. Stainless steel and French oak puncheons shared the fermentation and were eventually blended after four months. The attack is refreshingly green apple, lemon, and white grapefruit with an oily, leesy undercurrent. Salty grapefruit pith dominates the finish, calling for fresh goat cheese or a creamy pasta dish. The fruit was whole cluster pressed and fermented cool in a mix of stainless and French puncheons, with each variety vinified separately, with 4 months on lees prior to the final blend. Green apple, lemon, white grapefruit, guava is imbued with toasty spice and slicked with a thin bed of lees. The end of this medium bodied white lingers with flake salts and grapefruit pith.
