It is fermented into stainless and French puncheons and kept separate for four months before the final blend. It is a little less formal in style, with some Marlborough passionfruit leading a fresh pear and grapefruit undercurrent. No need to wait for this one, it is ready to go. Oysters are the match. After destemming and light crushing, each was left on skins for 3 hours before being pressed into stainless and French puncheons for solo ferments and 4 months on lees prior to blending. Punchy and direct with passionfruit, pink grapefruit, crunchy pear on a forward, potent palate. The wood certainly takes a backseat to the fruit here, with perhaps some cedar-tinged spicing the only fumé-indication. Oliver, Okanagan Valley, British Columbia, CanadaA sauvignon blanc–semillon blend from Dhaliwal Bros Vineyard in Oliver, the fruit was crushed and then macerated for three hours before pressing. Fermentation was slow and cool in a combination of stainless steel and puncheon, giving this a fruit-forward character that's led by grapefruit, orange zest, and passionfruit.
