South Australia, AustraliaBin 707 is and always has been a multi-regional, multi-vineyard cabernet sauvignon made with a singular purpose: to be one of the very best cabernets in the world. That goal explains why it isn’t made every year. 707 was not made from 1970 to 1975 nor in 1981, 1995, 2000, 2003, 2011 or 2017. 2018 was a dream year for 707, naturally adding weight and heft to a boisterously big red wine with intensive varietal expression. It spends 18 months in new American oak hogsheads, although you hardly notice the oak that is easily soaked up into the wood. Intense, glossy blackberry, black cherry, spice, chocolate, and power, all with finesse, believe it or not. It needs a decade to wake up and will live through 2050.
