Penfolds Cabernet Sauvignon Bin 707 1999
South Australia, Australia707 is a blend of Coonawarra, Padthaway and Kalimna fruit, aged in 100% American oak. Spicy, pencil lead, green bean, olive and vanilla aromas with cassis and menthol in the background. Dry and moderately tannic with more minty, spicy, peppery, sandalwood flavours and a mocha, prune, cassis, earth finish. Big yet somewhat lean and less ripe than the massive 1998. Still, this needs 4-5 years to fatten up and drop some of the lean mean cabernet character.
