Penfolds Cabernet Sauvignon Bin 707 2007
South Australia, AustraliaDark cherry colour. Coffee, vanilla, cassis, tobacco, cedar, prune plum, saddle leather, black olive, clove aromas. Ripe, round, full, dry palate with some grippy tannins and fresh acidity. Cassis jam, chocolate, espresso, tobacco leaf, cedar, black olive, meaty, vanilla, soy and licorice root flavour. Warm, somewhat tart finish but very good flavours. Needs 3-5 years to soften out and perhaps flesh out the slightly skinny mid-palate.
