Vin de Pays d'Hauterive, Languedoc, Sud de France, FranceThe high-density vineyard of chardonnay, viognier, and sauvignon blanc is managed according to biodynamic doctrines, and yields are kept under an impressive 25hl/ha. It is a Burgundy, Rhone, Bordeaux blend that amuses Bertrand as he fights to establish a place for Languedoc wine among the serious bottles of French wine. The fermentation is a 70/30 new oak /stainless steel affair followed by 7-8 months of barrel ageing until the spring equinox. The nose is a complex offering of ripe grapefruit, white flowers, peaches, and toasted notes, while on the palate, the textures are silky smooth with more exotic citrus fruit flavours.
