Chablis, Burgundy, FranceThis winery has been passed from father to son without pause since 1620. Benoît is the 14th generation, working with his father Jean-Paul on their 26 hectares in Chablis, all managed lutte raisonée. This was fermented wild, aged on fine lees without battonage, and spent 8-10 months in tank on lees. Tight and lean, even with the warm 2018 vintage, this streams along the palate with stony minerality, lemon peel and pith, subtle white blossoms.
