Chablis, Burgundy, FranceThis winery has been passed from father to son without pause since 1620. Benoît is the 14th generation, working with his father Jean-Paul on their 26 hectares in Chablis, all managed lutte raisonée. This was fermented wild, aged on fine lees without battonage, and spent 8-10 months in tank on lees. As is the house style, this is streamlined and flowing with stones, green apple, pear skin, and light lees along a silken palate, scented with subtle apple blossoms.
