Jean-Paul & Benoit Droin Chablis 2017

Chablis, Burgundy, FranceThis is one of my favourite Chablisienne producers. Since 1620 this winery has been passed from father to son without pause. Benoît is the 14th generation, working with his father Jean-Paul on their 26 HA in Chablis, all managed latte raisonée. This was fermented wild, aged on fine lees without battonage, and spent 8-10 months in tank on the lees, without battonage. This deftly strides being fresh, but with confidence and elegance, with energy beaming through stony minerality, fine lees, lemon peel, lemon blossom, white asparagus, and wild herbs.
