Jean-Paul & Benoit Droin Chablis 2015

Chablis, Burgundy, FranceSince 1620 this winery has been passed from father to son without stopping. Benoît is the 14th generation, working with his father Jean-Paul on their 26 HA in Chablis, all managed latte raisonée. This was fermented wild, aged on fine lees without battonage, and spent 8-10 months in tank on the lees, without battonage. Youthful and juicy, tight still, with white asparagus, lemon peel, pear skin grip, Asian pear crunch and river stone minerality imbued with an herbal-lined leesiness giving mid-palate weight. As with all their wines, beautiful fluidity, even now in the tightness of youth.
