In 2017 there were three in a ‘Platinum’ attempt to create a complexity of flavours and acidities in the wine. The fruit is 100 percent own-rooted, and the clone remains a mystery from its big bunches to its loose bundles of grapes. It gets 8-12 hours of skin contact, 50 percent stems, and is naturally fermented in a mix of stainless steel tanks, stainless steel barrels, neutral oak barrels and ceramic balls — post ferment the juice spends a minimum five months on its lees to shape its creamy palate.
