John Duval Entity Shiraz 2010
Barossa Valley, South Australia, AustraliaEntity is Duval's shot at an elegant Barossa shiraz. He uses some cooler Eden Valley fruit to help maintain the freshness. The ferment is done with the cap submerged in small open stainless steel fermenters. The wine is age for 18 month in oak barrel of which 36 percent are new French oak hogsheads. Blueberries dominate the nose with a savoury peppery undercurrent. Amazingly smooth and glossy on the palate seems to linger forever throwing spice, chocolate and more juicy black fruit flavours into the finish.
