This month, we turn our attention to local sparkling wine. It's hard to describe the significant progress made since the launch of Baby Duck in the early 1970s, but the expression day and night quickly comes to mind.
Here in B.C., a true cool climate delivers the essential annual base ingredient: acidity. And 50 years down the road, producers have begun to see the rewards of paying the utmost attention to all the details, starting in the vineyard, before a second fermentation inside the bottle, and extended aging on its lees of a kind we haven't seen before.
For all you Canada-only shoppers, here is an alphabetical list of some of our favourite local sparkling wines that we have recently tasted. Given the dismal, monopoly-managed distribution system in B.C., your best bet is to order directly from the wineries or check with your favourite private wine shop.
