Grapes were destemmed, crushed, and left on skins for 4 hours before dry icing, cold settling, and fermented cold, with 4 months' rest on lees. Bright and fresh, with crunchy green apple, crispy pear, and grapefruit, this finishes with a warming flush and a sour citrus twist.
