Corsica, Sud de France, FranceAfter studying law in Paris, Nicolas decided to make a U-turn and return to his roots in Corsica to live the dream of winemaking. Nicolas set up his winery in Oletta where he organically grows 7 ha of vines on his domaine. These organic Vermentinu (Vermentino) vines are from the 1ha Mursaglia vineyard’s clay limestone soils, facing east. This was native fermented in stainless, where it remained for 1 year prior to bottling, without fining or filtration, and with minimal SO2 throughout. Pouring a deeper yellow hue, this fuller white is rich and concentrated with white honey, ripe pear and pear blossom across an expansive palate. The concentration is easily countered by a buzzing limestone acidity, holding things fresh and aloft.
