Henschke Cyril Henschke Cabernet Sauvignon 2015

Eden Valley, South Australia, AustraliaNot just an Eden Valley legend, but an Australian one, Henschke's wines are unparalleled for their grace and gravitas, and this cabernet is no exception. This was planted in 1989 on sandy loams over sandstone, and farmed organically and with biodynamic practices in Eden's windy hillside environment. This vintage saw 1% cabernet franc tipped in, and spent a scant 10 days on skins, and was aged 18 months in French barrique (20% new). Fragrant and luring with wild herbs, iris, violets along a lengthy, finessed palate, bedding wild raspberry and cherry, and finishing with ample saltiness. Tannins are fine and firm, housing this through the lingering finish. Amazing how such an impactful wine can taste / feel so effortless.
