Vin de Pays d'Hauterive, Languedoc, Sud de France, FranceThe high density vineyard of chardonnay, viognier, sauvignon blanc is managed according to biodynamic doctrines, and yields are kept under an impressive 25hl/ha. It is a Burgundy, Rhone, Bordeaux blend that amuses Bertrand as he fights to establish a place for Languedoc wine among the serious bottles of French wine. The fermentation is a 70/30 new oak /stainless steel affair followed by 7-8 months of barrel ageing until the spring equinox. The nose is a complex offering of ripe grapefruit, white flowers, peaches, and toasted notes while on the palate, the textures are silky smooth with more exotic citrus fruit flavours.
