Pax Buddha's Dharma Chenin Blanc 2017

Mendocino County, California, United StatesThis single vineyard organically-farmed chenin was planted in 1944 on the gravelled volcanic soils at the base of Enlightenment Mountain. After a whole cluster press and native ferment in neutral French oak and new Stockingers, this goes through full MLF and ages in the same for 10 months. Full in the mouth, far beyond its meagre 12.2 degrees, this is voluminous with layers flavours that constantly shift in the glass: licks of reduction, savoury salts, broken stones, hay, wild mushroom, green apple. The palate is lined with beeswax and lees, and the finish is incredibly long with rafts of salty minerality.
