Guillaume Vrignaud Les Champréaux Chablis 2015

Chablis, Burgundy, FranceThis organically farmed Chablis comes from the 2.68ha ‘Champréaux’ vineyard, northeast of Fontenay-Près-Chablis. Kimmeridgian soils and 27 year old vines yield concentrated flavours, amplified and well suited to a native ferment, with 30% going to barriques and 500L barrels (10% new). Post ferment and full MLF, this remained in the mix of wood and stainless for ten months on the lees. Subtle vanilla mingles with white blossom, pear skin, lemon, on the medium bodied, concentrated, lees-lined palate, one held taut by lemon pith bracing and salted stone finish. Confident and properly so. Guillaume joined his family's domaine in 1999, and convinced his father to leave the co-op, build a cellar, and start their own label. They moved to organic viticulture in 2009, but like many growers, had to abandon in the very challenging 2016 vintage.
