In all, some 60 blocks were involved in the blend, 25 percent of which was barrel-fermented in French oak, and five percent of that was new wood. The nose and palate is bright pear with a squeeze of lemon, and the mid-palate is firm and dry. Don’t bother looking for any sugar; it ends with the perfect lime pith bitterness. Potent primary pear, yellow apple, white peach, and spice rides along a silky palate, slightly plump via lees and wood to a bitter pear skin, lime pith finish.
