Estate fruit was picked as lots and whole cluster pressed separately, each fermented and aged in stainless to preserve the fresh, pure fruit. They were then blended to achieve this winning, youthful white. Lime rules the juicy, off-dry palate, with pulp and peel playing staring roles, and accompanied by green apple, pear, kiwi, and mouthwatering sherbet-laced acidity which holds the 19 g/L RS at bay. The purity of fruit is the Tantalus signature, and you get that and more in this 2018, a vintage that started slow, and slowed down under a haze of summer smoke before harvest. The wine is bright, clean and refreshing with signature aromas of tangerines, lime leaf, and flowers that spill across its stony, mineral palate, flecked with kiwi and starfruit.
