Tinhorn Creek Pinot Noir 2016
Okanagan Valley, British Columbia, CanadaExpect a juicy, soft, ripe pinot with black cherries, a touch of spice and orange peel. A simple but stylish take on the variety, and certainly one with better oak and fruit management than in previous vintages. Ready to drink, but it should age through 2022. Fermented in small open top fermenters and allowed to ferment spontaneously, this was 30 percent whole cluster on the bottom, with the remaining fruit crushed and destemmed on top. Once active the tank is pumped over for two days to mix the naturally fermenting yeast. After that, only one or two punch downs a day are used to gently extract colour, flavour and tannin.
