Okanagan Valley, British Columbia, CanadaA distinctive style in a veritable sea of BC bubbly, The One from Noble Ridge rings with smoked stones and toasted biscuit, topped with lemon curd, crunchy red apple and riffing sea salts. This medium-bodied fizz dances on the palate, reflective of this single vineyard estate blend's large proportion of chardonnay (82/18 chardonnay/pinot noir). Whole cluster pressed, cool fermented prior to 27 months on the lees, the 7.6 g/l RS just edges out the racy acidity for a harmonious finish, lingering with aged parmesan.
