Valle de Aconcagua, Region de Aconcagua, ChileAt 91 percent cabernet Founders is a pure expression of Aconcagua with its intense aromatic cassis nose with bits of cedar and balsamic. The palate is soft and surprisingly elegant; obviously tannin management is now a priority. On the palate resin, pencil lead, red currant ripe olives and peppery, cassis, blackberry fruit mingle with its supple vanilla and tobacco finish. Well-structured and definitely one to age through 2012 and beyond. Game, osso buco and other hearty dishes come easily to mind as a pairing solution.
