Mitolo Serpico Cabernet Sauvignon 2003

McLaren Vale, South Australia, AustraliaAn unusual wine made with grapes picked at full ripeness then dried on racks for 5-6 weeks to gain an extra level of power and complexity, similar to Amarone. Fermented and then cooled to spend an extra 10 days on the skins before aging in French oak. Open spicy, leafy, licorice, cassis, chocolate, saddle leather and coffee aromas with some warmth. Rich, round, suave and slightly tannic with a tight core of acidity. Lots of cassis, mint, tobacco, saddle leather, vanilla, spicy licorice flavours with a rootsy, chocolate finish. Fine finesse and elegance but definitely on the warm side at 14.9%. Will need 2-4 years to fully smooth out.Tasted: 24 March 2005Tasted by: Stuart TobePrices:
