South Australia, AustraliaThe bookend to the Thomas Hyland chardonnay is the shiraz made from select parcels of fruit grown at McLaren Vale, Coonawarra and the Barossa Valley in South Australia. It's mostly matured in used French and American hogsheads to create a more accessible style than the Bin wines. We like the savoury, blueberry, plum fruit flavours and soft tannins.
