Noble Ridge The One Sparkling Brut 2019

Okanagan Falls, Okanagan Valley, British Columbia, CanadaThe One is crafted using the Méthode Traditionnelle, or the second fermentation in the bottle. The fruit is grown in the Home Vineyard overlooking Vaseux Lake in Okanagan Falls, on north and south facing slopes over sand, gravel, and rock. It is a 77/23 blend of chardonnay and pinot noir, made from hand picked whole cluster pressed fruit, all in pursuit of finesse. This was aged an impressive 67 months in bottle, plenty of time to develop its character. There is a persistent bead of small bubbles that lifts its citrus, leesy nose out of the glass. The attack is fresh and pure, cleaner than the 2018, followed by green apples, almonds, and muted cherry. The finish is mostly dry, with a mineral, saline undertone.
