Terrasses de Larzac, Coteaux du Languedoc, Languedoc, Sud de France, FranceChâteau la Sauvageonne is a special site in the Terraces du Larzac appellation, in the northern part of the Languedoc's Hérault region, with basalt, schist, and iron laced soils. This biodynamic blend of syrah, grenache, and mourvèdre saw each plot fermented separately, with 3 weeks of maceration before heading to new 225L French barrels for up to 16 months. Fragrant scrubby resinous herbs and ferrous veins are woven throughout this powerful, full (15.5%) red, amidst wild cherry, boysenberry, raspberry swirling on the palate, and lingering long on the finish. Even with all the depth and density, there's an bright stony acidity keeping all in balance, and an easy silkiness to the ample tannins, making this drinkable now (bonus points to lamb) but with time certainly ahead in your cellar. It's a red blend crafted from individual lots of syrah, grenache, and mourvèdre grown on basalt, schist, and red soils, or 'ruffes' as they are known in the renowned Terrasses du Larzac sub-appellation. The aromatics are consistently present, led by savoury blackberry, black plums, with a peppery garrigue undertone poking through. The textures are similarly rich and layered, with more black raspberry and plum notes but with a much welcomed saline, mineral Grand Cru-like freshness. The site experiences the most significant overnight temperature changes in the Languedoc, helping to maintain the wine’s acidity and freshness. There is no rush to drink this Demeter-certified biodynamic red that can easily age through 2032. Acclaimed wine writer Andrew Jefford once mused about where the greatest terroir in Languedoc was, saying, "You could make a case for Faugères, for Pic St Loup, for parts of St Chinian, for Minervois La Livinière, maybe for La Clape, but after my trip I have to say that if you were to write me out a cheque for a million euros and tell me to find somewhere to make great red wine, I would look most closely of all at Terrasses du Larzac."Tasted: 06 December 2025Tasted by: Prices:
