Drouhin Vaudon Chablis 2023

Chablis, Burgundy, FranceThis wine comes exclusively from the Drouhin Family Properties, specifically a 6 hectare block on the right bank of the Vauvilien Valley, nestled between the Premier Cru vineyards of Mont de Milieu and Montée de Tonnerre. Its Kimmeridgian limestone soils contain countless tiny marine fossils embedded in a white/grey mortar believed to have once been a seabed hundreds of millions of years ago. With a modest 12.5%, the aromatics are lively, featuring bright florals and wet stone mineral notes. The wine offers a mix of citrus with a touch of softness in 2023, due to one of the warmest years in Chablis history. It still finishes with that flinty note that pairs perfectly with freshly shucked West Coast oysters.
