Therianthropy Bonnie Vivant Chardonnay 2023
Niagara Peninsula, Ontario, CanadaThe 2023 was the last vintage at Bock Vineyard; the team has moved to another organic vineyard for their 2024 Chardonnay. These 12-year-old vines were native fermented and whole cluster, with 12% experiencing 19 days on skins while the remainder had a 4-day cold soak. All went into a concrete egg for 33 days of fermentation with full MLF. The wine stayed in the egg for 10 months on fine lees (undisturbed), before being bottled unfined and unfiltered. Perfumed white blossoms, lemon pith and peel, and lemon verbena glide along the medium-bodied palate, with a fine buzzy stony spice that lingers on the finish.
