Therianthropy Bonnie Vivant Chardonnay 2023
Niagara Peninsula, Ontario, CanadaThe 2023 was the last vintage for Bock vineyard, as the team moved to an organic vineyard for their 2024 Chardonnay. These 12 year old vines were native fermented and whole cluster, with 12% seeing 19 days on skins while the remainder had a 4 day cold soak. All went into concrete egg for the 33 days of fermentation with full MLF. The wine remained in the egg for 10 months on fine lees (undisturbed), before going to bottle unfined and unfiltered. Perfumed white blossoms, lemon pith and peel, and lemon verbena glide along the medium bodied palate, with a fine buzzy stony spice that lingers on the finish.
