Côte des Blancs, Champagne, FranceFrom their estate vineyards in Avize, this vintage BdB was primarily fermented in stainless, with 28% in oak casks, and no MLF. It was taken off at lower pressure, to create a silkier mouthfeel. After 5 years sur lattes, this was disgorged with 7 g/L. Shining and sleek, with lemon tart, green apple, along a steely frame, with a shimmering lemon pith on the finish.
