Seven Stars Sirius 2017

Fraser Valley, British Columbia, CanadaMade from 59% chardonnay and 41% pinot noir grown in the Fraser Valley, this polished sparkling wine shows remarkable finesse and depth. Co-fermented and aged for 5 years on the lees, it pours a pale straw hue with a fine, persistent bead. Autolytic notes of fresh baked brioche and biscuit wrap around pure, pristine pear and delicate florals. The palate delivers a creamy texture and finely etched bubbles, lifted by vibrant acidity. The 5 g/L dosage, drawn from barrel aged chardonnay, adds gentle richness while keeping the wine energized and focused. Every element feels in tune, with freshness, tension, and precision working together through a long, elegant finish.Tasted: 16 October 2025Tasted by: HJ ChaPrices:
