Township 7 Seven Stars Sirius 2016

Fraser Valley, British Columbia, CanadaWinemaker Mary McDermott has assembled a first-class sparkling wine program at Township Seven, and Sirius is one of the stars. The 2016 has been sleeping quietly for 60 months in south Langley, where the grapes were grown. Sirius is a serious sparkling wine made with 76% chardonnay (Dijon Clone 96) and 22% pinot noir (Dijon Clone 777 & 78). McDermott says, “Langley estate fruit is special, as the microclimate offers a unique terroir within BC. Planted over 20 years ago, the vines are located only two miles from the Canada/US Border at 49° N latitude, the same as Champagne, France.” I like the apple brioche dusted in citrus, followed by a creamy, mineral, red berry character that runs through the finish. Lean, stylish, and will keep for years in the bottle, this is a top flight BC bubble you should try before it all disappears. After riddling, the wine was disgorged, and a small amount of proprietary dosage was added for complexity and depth of flavour.
