It is an Eden Valley benchmark and for good reason. It was first established in 1847, and the vines can tell stories that few others have had the privilege of experiencing. It is fermented in stainless steel, literally sharpening its fresh green apple, lemongrass, and lime juice, all with a salinity and stony minerality that begs for more. It is bone dry and intense, and will work with just about any food you can think of.
