Okanagan Valley, British Columbia, CanadaInfinity is a mix of fruit from low yielding premium blocks that are given the highest priority to reveal their best at every step. The grapes are left to gently self press overnight before the juice is run off into new or near new French oak barrels for 24 months. This wine opens with savoury, spicy aromatics that take me to Apulia, although the polished tannins are pure Bordeaux.
