Okanagan Valley, British Columbia, CanadaInfinity is a mix of fruit off low yielding premium blocks. At every step of the process the fruit is given the highest priority to reveal its best. The grapes are left to self-press gently overnight, and the juice is run off into new or near new French oak barrels for 24 months. This wine opens with promising bright savoury aromatics, black cherries, graphite, and dense sweet tannins that build a structure with zero dryness. The finish is lush and mostly smooth with more spice and length.
