Township 7 Seven Stars Polaris 2020
Okanagan Valley, British Columbia, CanadaTownship 7's sparkling program is well on its way under the watchful eye of its creator winemaker, Mary McDermott. The series is six strong with a seventh label in the offing. All the wines are made using the classic traditional method. Polaris is the guiding light for the program, a blanc de blanc that flirts with finesse and flavour, pitching pure green apple, white florals, and lemon pith, a creamy texture, and subtle peach and lime on the finish. The 2020 is slightly drier than previous versions, adding the complexity I crave in this wine. The wine is en tirage for at least 18 months. After hand riddling, the wine is disgorged and topped with a proprietary dosage. 2020 brought everything mother nature could think, beginning with a cool, wet start that delayed bud burst about 7–10 days. Heavy rains during flowering interrupted pollination, leading to a poor fruit set and reduced yield by as much as 20-30%. The humidity was higher than usual in June and early July, causing some early disease pressure before hot, dry weather arrived in July and August, allowing the ripening to return to normal. Smoke from western United States wildfires drifted north to our region, slowing photosynthesis.
