Rully, Côte Chalonnaise, Burgundy, FranceSourced from several prime parcels across Côtes Chalonnaise's Rully, Pascal ferments and ages this wine in 500 L oak puncheons (25% new) for 11 months, with zero bâtonnage, before bottling with a very light filtration. The oak is evident in the subtle toast texturing the frame of this medium+ chardonnay, woven through lemon curd, tight white blossoms, pencil shavings, all lit with a crunchy green apple acidity. This carries long on the palate, finishing with ample flake salts.
