Coonawarra, South Australia, AustraliaOne whiff of the Hollick Old Vines Cab, and you are transported to the terra rossa soils of Coonawarra in the Limestone Coast Wine Zone. The old vines are matured in French oak, which envelops the warm, spicy red with a mean eucalyptus streak that runs through soft, ripe black plum mixed with green olives that dominate the finish. It comes off two well known old vine vineyard blocks: Ilgha and Neilson's Block, both at the cooler southern end of Coonawarra. You can drink this now with a grilled piece of beef or wait another five to seven years.
