The residual sugar is a hefty 17.55 g/L, but seven months on its lees in a mix of 25/75 neutral puncheons and barriques and stainless steel gives it a whack of juicy acidity, leaving a fresh, lip-smacking style, pitching limes, honeysuckle, and red apples.
