Domaine Chevalier Bourgogne Aligoté 2021
Burgundy, FranceFrom 30+ year old vines in the village of Ladoix Serrigny, on the Côte de Beaune, this Aligoté started fermentation in stainless, and finished in older barrel, resting there over 11 months before bottling. Banana custard, perfumed yellow apples, and yogurt lead the palate, before a sharp citrus acidity cuts across the whole, driving this to a very buzzy finish. A bit disjointed at present, with ample energy to hopefully smooth things out in the future.
