Coteaux d'Aix-en-Provence, Provence, Sud de France, FranceThis organic / biodynamic blend of Vermentino and Sauvignon blanc comes from d'Aix's limestone slopes. After a ferment in stainless and barrel, this continued to mature in barrel on lees for 6 months, with bâtonnage, prior to bottling. The creaminess from the barrel and lees work are easily met by the limestone laced fruit on the streamlined, lightly creamy palate.
