Arbois, Jura, FranceIn the Jura, ouillé indicates that barrels are topped up with wine to prevent the oxidative character and flor yeast that is characteristic of old school classic Jura. Almost all modern Jura whites are made in this way, as are 99 % of white wines worldwide. Savagnin is a very old variety which beget many other grapes over the centuries, including chenin blanc. This Savagnin is from parcels in Château Gimont and Gaillard, in Montigny-les-Arsures, planted in grey marls. It was native fermented in barrel, where it remained 9 months. Racy wild lemon, pear skin, wild green herbs streak across the tart, salty palate, with a subtle flax / lees bed that stretches long on the finish.
