Oliver, Okanagan Valley, British Columbia, CanadaAs BB matures its traditional method sparkling program, this has moved into NV bottling, reflecting the use (however small) of reserve wines. The current iteration is entirely chardonnay, fermented and aged four months in stainless before heading to bottle and 12 months sur lattes. It was disgorged in October 2022 with 0 dosage. Buzzy lemon and green apple up front move into a creamy, peachy palate, with pear blossoms and toast, tightening up again on the lemon peel finish.
