Paddy Borthwick Chardonnay 2020

Wairarapa, North Island, New ZealandFrom Wairarapa's Gladstone subregion and own-rooted chardonnay planted in 1997 on stony, alluvial soils, this was whole berry pressed and transferred to French puncheons for a native ferment, with little MLF, and ten months in French oak puncheons (20% new) before blending and bottling. Opening with a wave of reduction, this segues into a plump palate of lemon curd, crushed stone, nougat, popcorn, and flake salts, running long on the saline finish.
